Cariboo Gardening Guide 2003
* The 24 Carrot Cafe' *

Every morning at the 24 Carrot Café begins with freshly baked muffins, the aroma of quality ground coffee and the sizzle of sautéed vegetables – the beginning of any great soup.

All of our soups are homemade – never out of a can. Here is a recipe for Carrot – Orange soup. One of my personal favorites.

Serves 4

1 lb      carrots chopped
1 oz.      Butter
1/2 cup      Orange Juice
4 cups      Chicken Stock
1      Small Onion Chopped
3-4 tsp.      Fresh Thyme

Salt and Pepper to taste
Sour Cream & sprig of thyme for garnish
 
  1. Peel and chop carrots. Sauté carrots and butter in sauce pan over medium heat for ten minutes, stirring occasionally.
  2. Add orange juice, stock and onion. Bring to a boil. Add thyme, salt and pepper to taste.
  3. Reduce heat, cover and cook for 20 minutes, or until carrots are tender. Allow to cool
  4. Blend soup in blender until smooth. Return soup to pan and re-heat.
  5. To serve, ladle into 4 individual bowls and garnish with a dollop of *sour cream and a sprig of thyme.

*Ranch dressing can be used as a substitute for sour cream.

Restaurant hours will be extended this season due to Golf Course opening. Watch for new hours later in the year.
