Cariboo Gardening Guide 2003 * The 24 Carrot Cafe' *
Every morning at the 24 Carrot Café begins with freshly baked muffins, the aroma of quality ground coffee and the sizzle of sautéed vegetables – the beginning of any great soup.
All of our soups are homemade – never out of a can. Here is a recipe for Carrot – Orange soup. One of my personal favorites.
Serves 4

carrots chopped |

| 1 oz. |
Butter |
| 1/2 cup |
Orange Juice |
| 4 cups |
Chicken Stock |
| 1 |
Small Onion Chopped |
| 3-4 tsp. |
Fresh Thyme |
Salt and Pepper to taste |
| Sour Cream & sprig of thyme for garnish |
- Peel and chop carrots. Sauté carrots and butter in sauce pan over medium heat for ten minutes, stirring occasionally.
- Add orange juice, stock and onion. Bring to a boil. Add thyme, salt and pepper to taste.
- Reduce heat, cover and cook for 20 minutes, or until carrots are tender. Allow to cool
- Blend soup in blender until smooth. Return soup to pan and re-heat.
- To serve, ladle into 4 individual bowls and garnish with a dollop of *sour cream and a sprig of thyme.
*Ranch dressing can be used as a substitute for sour cream.
Restaurant hours will be extended this season due to Golf Course opening. Watch for new hours later in the year. |
